Harissa Tahini Cauliflower
This is one of my favorite cauliflower dishes! It’s perfectly roasted cauliflower made with a harissa tahini sauce, dates, and fresh herbs.
Ingredients
1 head of cauliflower, chopped into florets
3–4 dates, pits removed and roughly chopped into small pieces
Dill
Mint
Harissa Tahini Sauce:
3 tbsp tahini
1.5 tbsp maple syrup
1 tsp harissa paste
1 tsp garlic powder
1/2 teaspoon sea salt
Juice from 1 medium lemon
2 tbsp water
Instructions
1. Preheat oven to 375°F and line a large baking sheet with parchment paper.
2. To make the sauce, whisk together the tahini, lemon juice, maple syrup, harissa, garlic powder, salt, and 1 tbsp of water. If the sauce is too thick, you can gradually add water until you reach your desired consistency. Taste and adjust the seasoning as needed.
3. Chop the cauliflower into small pieces and place in a large bowl. Pour the tahini sauce over the cauliflower and toss until evenly coated.
4. Spread the coated cauliflower florets on the lined baking sheet and roast at 375°F for 35 minutes. Remove from oven and turn cauliflower. Turn oven to broil and bake for an additional 10-15 minutes or until slightly crispy around the edges.
5. Remove from the oven, add to a serving bowl, and mix in the date pieces, dill, and mint. Serve immediately and enjoy!
Recipe Notes:
- Watch closely when you are broiling the cauliflower as it can burn quickly. Depending on your oven, you may want to turn half way through to help cook evenly.
- Decrease the amount of harissa you use if you want the dish to be less spicy.
