Coconut Bone Broth Rice
This coconut bone broth rice is a flavorful and nourishing dish that combines the richness of coconut and the benefits of bone broth. Here's a simple recipe for you to try:
Ingredients
2 cup organic jasmine rice
1 cup full fat coconut milk from a can
1 1/2 cups bone broth
1 tsp sea salt
Fresh cilantro or parsley, chopped (for garnish)
Instructions
Making rice in an Instant Pot:
1. Rinse the rice under cold water until the water runs clear. Drain and set aside.
2. Pour the rice, coconut milk, bone broth and sea salt into the Instant Pot.
3. Close the lid and set it manually for 5 minutes at high pressure. Let it naturally release for 10 min.
4. Once the pressure has been released, carefully open the Instant Pot. Use a fork to fluff the rice gently and mix in fresh herbs if desired.
Making rice on the stove:
1. Rinse the rice under cold water until the water runs clear. Drain and set aside.
2. In a large saucepan or a pot with a tight fitting lid, add in the rice, sea salt and bone broth + coconut milk.
3. Place the saucepan on the stove over high heat. Bring to a boil while uncovered.
4. Reduce Heat and Cover. Once the liquid is boiling, immediately reduce the heat to low to maintain a gentle simmer. Cover the saucepan with the lid.
5. Simmer for about 15-18 minutes.
6. Remove the saucepan from the heat and let it sit, covered, for an additional 5-10 minutes.
7. Use a fork to fluff the rice gently and serve. Enjoy!
