Turmeric Bean Dip
This bean dip makes for a great appetizer that you can serve with your favorite crackers, chips, or vegetables.
Ingredients
1 can (15 oz) northern beans, drained and rinsed
1 onion, chopped
1/4 cup chevre - goat cheese
1/4 tablespoons extra virgin olive oil
1 lemon, juiced
1 tsp: ground turmeric, paprika, cumin, and garlic powder
Salt and pepper to taste
Instructions
1. Sauté the onion. Heat 1 tbsp of ghee (or olive oil) in a pan over medium heat. Add the finely chopped onion and sauté until it becomes soft and translucent, about 5 minutes.
2. Prepare the beans: Rinse and drain the northern beans thoroughly. Add the beans and spices to the pan with the onions and saute for a couple more minutes.
3. Blend the ingredients: In a food processor or blender, combine the sautéed onions, northern beans, crumbled goat cheese, lemon juice and olive oil. Add salt and pepper to taste.
4. Blend until smooth: Blend the ingredients until you achieve a creamy and smooth consistency.
5. Adjust Seasoning: Taste the dip and adjust the seasoning with more salt, or lemon juice as needed. You can also add more turmeric or spices for a stronger flavor. Or more goat cheese for a more creamy dip.
