Dairy Free Tzatziki Sauce

Ingredients

1 cup unsweetened coconut yogurt

1 medium cucumber, peeled and grated

5 garlic cloves, minced

Juice of 1 lemon

1/3 cup fresh dill, chopped

Salt to taste

Instructions

1. Peel the cucumber and grate using a box grater or a food processor.

2. Place the grated cucumber in a fine-mesh sieve or cheesecloth. Squeeze out the excess moisture from the cucumber by pressing it against the sieve or cheesecloth. You want the cucumber to be as dry as possible.

3. In a bowl, combine the unsweetened coconut yogurt, minced garlic, lemon juice, and chopped dill. Mix well to combine.

4. Add the squeezed cucumber to the yogurt mixture. Stir until all the ingredients are well incorporated.

5. Taste the Tzatziki sauce and season with salt and pepper according to your preference.

6. Cover the bowl with plastic wrap or a lid and refrigerate the Tzatziki sauce for at least 1-2 hours before serving. This allows the flavors to meld together and the sauce to thicken slightly.

7. Before serving, give the Tzatziki sauce a good stir. You can garnish it with additional chopped dill if desired.
