Pumpkin Chocolate Chip Muffins
Ingredients
2 eggs
1/2 cup (or 3/4 cup for more sweetness) maple syrup
1 1/2 tsp vanilla extract
1/4 cup ghee or butter, melted and cooled
1/2 cup pumpkin puree
2 cups oat flour
1 1/2 tsp baking soda
1 tbsp cinnamon
1 tsp pumpkin pie spice
1/2 tsp sea salt
1/4 cup dark chocolate chips
Instructions
1. Preheat the oven to 350°F (175°C).
2. Melt the ghee (or butter) and allow it to cool slightly.
3. In a large bowl, whisk together the eggs, maple syrup, pumpkin puree, melted ghee, and vanilla extract.
4. In a separate bowl, stir together the oat flour, baking soda, cinnamon, pumpkin pie spice, and sea salt.
5. Gradually add the dry ingredients to the wet ingredients, stirring until well combined.
6. Line a muffin pan with liners (or grease the pan if not using liners) and fill each cup with the batter.
7. Sprinkle dark chocolate chips evenly over each muffin.
8. Bake for about 20 minutes, or until a toothpick inserted into the center comes out clean.
Allow the muffins to cool before serving.
