Almond Butter Granola Bars

These no-bake almond butter granola bars are made with just a handful of  ingredients! Perfect for a quick snack or healthy treat. Ready in just a few steps—no oven required!

Ingredients

1 cup creamy almond butter 

2/3 cup honey 

1 tsp vanilla extract 

1 tsp sea salt 

2 1/2 cup oats 

1/4 cup pumpkin seeds (or sub chopped cashews)

1 tbsp hemp seeds (optional) 

Instructions

1. Stir together almond butter, honey, vanilla extract and sea salt. (If your almond butter isn't creamy, heat the mixture in a saucepan over low heat, stirring until smooth.)

2. Add the rolled oats, pumpkin seeds, and hemp seeds (if using), and stir until the mixture is well combined.

3. Line an 8x8-inch pan with parchment paper, leaving some overhang on the sides for easy removal.

4. Transfer the mixture into the pan and press it down firmly with your hands or the back of a measuring cup to create an even layer.

5. Place the pan in the fridge to set for at least 1 hour, or until the bars are firm.

6. Once set, slice them into squares, and enjoy!

Recipe Notes:

- Store in an airtight container in the fridge for up to one week.
