Peanut Butter Chocolate Chip Granola Bites

These peanut butter chocolate chip granola bites are made with just a few simple ingredients. Quick to make and perfect for a snack or sweet treat for your kiddos (or yourself!). Store them in the fridge, and you're good to go!

Ingredients

2 1/2 cups oats

1 cup organic peanut butter (made with just peanuts)

2/3 cup honey

1 tsp vanilla extract

1/2 tsp sea salt

1/4 cup chopped cashews (or swap with almonds)

1/3 cup dark chocolate chips 

Instructions

1. In a large bowl, combine the peanut butter, honey, and vanilla extract. Mix until smooth. If your peanut butter is on the thicker side, warm it up gently over low heat until it softens.

2. Chop the almonds into small pieces.

3. Add the oats, chopped nuts, and sea salt into the peanut butter mixture. Stir until everything is evenly coated and sticking together nicely.

4. Once combined, gently stir in the chocolate chips.

5. Line an 8x8 baking pan with parchment paper, leaving some overhang on the sides for easy removal. Press the mixture firmly into the pan, using the back of a spoon or your hands to level it out.

6. Refrigerate for at least 1 hour to let everything firm up.

7. Once the bars have set, lift them out using the parchment overhang. Cut into bars, squares, or bites. Enjoy!

Recipe Notes:

- Store the leftover bites in an airtight container in the refrigerator for up to one week.
