Fudgy Brownies
These gluten free brownies are super rich and fudgy with intense chocolate flavor!
Ingredients
1/2 cup butter
1/2 cup coconut sugar
2 eggs
1 teaspoon vanilla extract
1 cup dark chocolate chips
2 tbsp cocoa powder
1/4 cup tapioca flour
Sea salt
Instructions
1. Preheat oven to 350°F and grease an 8 x 8 square baking pan or line with parchment paper for easy removal
2. Using a hand mixer or stand mixer, beat together eggs and coconut sugar until light and fluffy (About 2-3 minutes)
3. Melt butter and dark chocolate chips. Mix together until smooth and creamy
4. Pour the two mixtures together and beat until combined
5. Next add in cocoa powder, tapioca flour and vanilla extract. Stir to combine
6. Pour into baking pan. Bake at 350°F for about 25 minutes. Allow brownies to cool completely and sprinkle with sea salt
Recipe Notes:
- If you’re in a rush, stick the pan in the fridge to speed up cooling time and make sure brownies are completely cooled before serving
- Store in an airtight container in the refrigerator
- You can sub the butter for ghee to make them dairy free
