Chocolate Chip Cookie Skillet

This easy gluten-free dessert is perfect for any occasion! Because of the oat flour, it has more of a cookie bar texture rather than a traditional cookie. Simple to make and perfect for sharing. Enjoy!

Ingredients

1 egg 

1/2 cup maple syrup  

1 teaspoon vanilla extract  

6 tbsp butter 

1 1/4 cup oat flour

1/4 tsp baking soda 

1/4 tsp sea salt 

1/2 cup chocolate chips

Instructions

1. Preheat oven to 325°F.

2. In a large bowl, mix together the softened butter and maple syrup.

3. Add the egg and vanilla extract to the butter and maple syrup mixture. Mix until well combined.

4. In a separate bowl, mix together the oat flour, baking soda, and sea salt.

5. Add the dry ingredients to the wet ingredients and mix. Stir in the chocolate chips.

6. Transfer the cookie dough to a well greased cast iron skillet. Spread out evenly using a spatula. Add a few more chocolate chips on top.

7. Bake in the oven at 325°F for 23-25 minutes.

Recipe Notes:

- I used an 8 inch cast iron skillet but feel free to use any sort of small baking dish for this recipe. (It may just change the baking time)

- Sub coconut oil for butter to make this recipe dairy free.

- Top with ice cream for an extra treat on top.
