Dark Chocolate Mousse
Make this dairy free dark chocolate coconut pudding when you have a sweet craving for chocolate! It’s satisfying and has zero refined sugars.
Ingredients
1 can full fat coconut milk
1/2 tbsp gelatin
3 tbsp cacao
3 tbsp maple syrup
1/2 tsp vanilla extract
Pinch of sea salt
Instructions
1. Bloom the gelatin. In a small bowl, combine a tablespoon of the coconut milk and the gelatin. Mix and allow to sit for a couple of minutes. (This helps the gelatin from clumping)
2. In a sauce pan, heat the rest of the coconut milk on medium low. You want it warm but not boiling.
3. Add in the ‘bloomed’ gelatin and whisk until dissolved.
4. Next add in the cacao and whisk until it is all mixed in.
5. Turn off the heat and add in the maple syrup, vanilla extract and dash of sea salt.
6. Pour into your desired glasses or jars and chill for at least 4 hours or until set.
