Banana Muffins

These are my favorite gluten free banana muffins! They are perfectly sweet and delicious. I think you’ll love them!

Ingredients

3 eggs

1 cup mashed banana (3 overly ripe bananas)

1/2 cup maple syrup

1 tsp vanilla extract

3 tbsp ghee, butter, or cooout oil

2 1/4 cups oat flour

1/4 cup tapioca flour

1 tsp baking soda

1 tsp cinnamon

sea salt

Instructions

1. Preheat the oven to 350°F.

2. Melt the butter (or oil of choice) and let it cool.

3. Mash the bananas in a large bowl. Mix in the maple syrup and vanilla extract.

4. Next add in the eggs and melted butter.

5. In a separate bowl, mix together the tapioca flour, oat flour, baking soda, cinnamon and sea salt.

6. Add the dry ingredients to the wet ingredients and stir until combined.

7. Line a muffin pan (or grease if you do not have muffin liners) and add the batter.

8. Bake for about 20 minutes at 350°F.
