Oat Pancakes
These gluten free and dairy free pancakes are a staple in our house on the weekends. They are kid friendly and made in a blender so clean up is minimal!
Ingredients
2 overripe bananas
2 eggs
1/2 cup milk of choice (I use canned coconut milk)
1 tsp vanilla extract
1 1/2 cups oats
2 tsp cinnamon
1 1/2 tsp baking powder
1/4 tsp salt
Instructions
1. Add all ingredients into a blender and blend on high until smooth. (About 30 second to 1 minute).
2. Grease the pan or griddle and pour the batter.
3. Flip the pancakes when they start to bubble and are golden brown.
4. Top with favorite toppings.
Recipe Notes:
- If the batter gets too thick as it sits, add a little more liquid as needed and blend.
- I typically use full fat coconut milk from a can but any milk will work.
- I love to simmer blueberries and a splash of maple syrup for the topping. (pictured above)
