Buffalo Cauliflower

Ingredients

1 head of cauliflower

2 tbsp olive oil, ghee, or butter

1/2 cup buffalo sauce (adjust to taste or size of cauliflower)

1 tsp garlic powder

1 tbsp lemon juice

1/4 cup arrowroot powder (reduce to 2 tbsp if using a smaller cauliflower)

Salt and pepper, to taste

1 tsp honey

Optional: Fresh dill for garnish

Instructions

1. Preheat your oven to 400°F (200°C).

2. Cut the cauliflower into small, bite-sized pieces.

3. Drizzle the cauliflower with olive oil, ghee, or butter. Sprinkle with garlic powder, salt, and pepper.

4. Evenly coat the cauliflower pieces with arrowroot powder.

5. Drizzle the cauliflower with lemon juice and buffalo sauce. Toss until all pieces are well coated. Add more buffalo sauce if needed to ensure even coverage.

6. Spread the coated cauliflower evenly on a baking sheet lined with parchment paper. Bake in the preheated oven for 25 minutes.

At the 25-minute mark, toss the cauliflower to ensure even cooking. Continue baking for an additional 15-20 minutes or until the cauliflower is tender and slightly crispy.

7. Remove the cauliflower from the oven and drizzle with honey. Garnish with fresh dill if desired.

8. Serve immediately while hot, with additional buffalo sauce or your favorite dipping sauce on the side. Enjoy!
