Quinoa Salad

This is an easy recipe that I love making in the summer and so nice to have as leftovers!

Ingredients

3 cups cooked quinoa (1 cup uncooked quinoa should make this amount) 

1 chopped bell pepper 

1 chopped cucumber 

3/4 cup chopped red onion 

1/3 cup finely chopped flat-leaf parsley 

1/2 cup goat cheese 

1/4 cup pumpkin seeds 

Dressing: 

1/4 cup olive oil 

1/4 cup lemon juice (juice from about 2-3 lemons) 

1 tbsp red wine vinegar 

2 garlic cloves (pressed or minced) 

Salt & pepper to taste 

Instructions

1. Bring 2 cups water to a boil in a medium pot. Stir in 1 cup quinoa. Cover and simmer over low heat for about 15 minutes, or until quinoa is tender and liquid is absorbed. Remove from heat and fluff with a fork. Set aside to cool. 

2. While quinoa is cooling, whisk together olive oil, lemon juice, red wine vinegar, minced garlic, salt and pepper together in a small bowl. 

3. Chop all veggies.

4. In a large mixing bowl, combine quinoa, chopped bell peppers, cucumbers, red onion, parsley, goat cheese and pumpkin seeds. Pour dressing over quinoa mixture; toss to coat. 

Serve immediately or chill in the refrigerator. 

Recipe Notes:

- Feta cheese would also work great if you are not a fan of goat cheese.
