Frozen Yogurt Bunny Pops
Here's a fun toddler snack/dessert idea! The bunny shapes are adorable and perfect for celebrating the spring season, but feel free to get creative with any shape you like.
Ingredients
1 cup of coconut yogurt (or any yogurt of your choice)
1 frozen banana
5 frozen strawberries
Chocolate chips (or blueberries)
Coconut shreds (optional)
Popsicle sticks
Instructions
1. Begin by lining a plate or baking sheet with parchment paper.
2. In a small blender or food processor, blend together the yogurt and frozen banana until smooth.
3. Transfer 2/3 of the mixture to a small ziplock bag and cut a hole in one corner of the bag.
4. Pipe the mixture onto the parchment paper, shaping it into the form of a bunny head and ears. Insert a popsicle stick into the bottom of the bunny head, and cover it with more of the yogurt mixture.
5. Optional: Sprinkle coconut shreds over the bunny shapes.
6. In the same blender or food processor, blend the remaining mixture with the frozen strawberries.
7. Transfer this strawberry mixture to another ziplock bag and use it to draw the ears and nose of the bunny on top of the yogurt base.
8. Add chocolate chips to create the eyes of the bunny.
9. Place the assembled bunnies in the freezer until they are frozen solid.
Recipe Notes:
- Store the frozen bunny pops in the freezer until ready to enjoy.
- You can swap out chocolate chips with blueberries for the bunny eyes.
- The type of yogurt you use may affect the consistency. If the yogurt and banana mixture appears too runny, simply add more banana.
