No Sugar Smash Cake
This make for a great cake for the first birthday! It’s the perfect amount of sweetness without refined sugar. This was a hit with our little guy!
Ingredients
3 eggs
1 cup mashed banana (3 overly ripe bananas)
1/2 cup maple syrup
1 tsp vanilla extract
3 tbsp ghee, butter, or cooout oil
2 1/4 cups oat flour
1/4 cup tapioca flour
1 tsp baking soda
1 tsp cinnamon
sea salt
Frosting:
1 can coconut milk, chilled
1 tbsp maple syrup
Instructions
1. Preheat the oven to 350°F.
2. Melt the butter (or oil of choice) and let it cool.
3. Mash the bananas in a large bowl. Mix in the maple syrup and vanilla extract.
4. Next add in the eggs and melted butter.
5. In a separate bowl, mix together the tapioca flour, oat flour, baking soda, cinnamon and sea salt.
6. Add the dry ingredients to the wet ingredients and stir until combined.
7. Pour cake batter into well greased pans. Bake for 30-35 minutes or until a toothpick inserted into the middle comes out clean.
8. Remove cake from oven. Allow cake to cool in the baking pan completely.
Dairy Free Frosting: Chill can of coconut milk 1 hour prior to making
1. Scoop out hardened part of coconut milk (the thick part on top) and set aside remaining liquid part.
2. Add hardened coconut milk and maple syrup to a stand mixer or you can also use a hand held mixer.
3. Whip for 1-2 minutes or until frosting is thick.
4. Frost the cake
Recipe Notes:
- Cooking time will vary depending on pan size used.
- If you don’t have mini pans you can use 1 large pan (8 x 8) or make them info muffins.
- Make sure to chill the coconut can in the fridge for at least 1 hour before making the frosting.
