Mint Chocolate Cookie Dough

These are my new favorite no bake dessert! The combo of mint and chocolate is so delicious and I am sure you'll love them. 

Ingredients

2 cups oat flour (If you don’t have oat flour, blend oats in a food processor or high-speed blender until you achieve a flour-like consistency)

2 tbsp unsweetened cacao powder

1/3 cup pure maple syrup

1/4 cup melted coconut oil

1/2 tsp peppermint extract

1/4 tsp sea salt

Instructions

1. Melt the coconut oil over low heat.

2. In a large bowl, combine the melted coconut oil, maple syrup, and mint extract.

3. In a separate bowl, whisk together the oat flour, cacao powder, and sea salt, ensuring there are no lumps in the cacao powder.

4. Gradually add the dry mixture to the wet ingredients, stirring until a dough forms. If the mixture is too wet, add 1 tbsp of oat flour at a time until the dough reaches a consistency where you can easily shape it without sticking.

5. Roll the dough into balls using a cookie scoop or your hands, then place them on a parchment paper lined tray or plate.

6. Refrigerate for at least 10 minutes to firm up.

Recipe Notes:

- A cookie scoop is helpful for portioning the dough evenly and not having it stick to your hands.

- Store leftovers in an airtight container in the refrigerator.

- If you do not have oat flour on hand, blend oats into a food processor or high speed blender until you have a flour consistency.
