Cookie Dough Truffles
Ingredients
Cookie Dough:
2 1/2 cups oat flour
1/3 cup pure maple syrup
1/4 cup melted butter
1 1/2 tsp vanilla extract
Pinch of sea salt
1/3 cup chocolate chips
Chocolate Coating:
1/2 tsp coconut oil
1/2 cup chocolate chips
Instructions
1. Melt the butter.
2. In a bowl, mix together the melted butter, maple syrup, vanilla extract, and a pinch of sea salt.
3. Next, add in the oat flour and mix together.
4. Once combined, add in chocolate chips.
5. Form into balls and refrigerate for 10 minutes.
6. While the cookie dough balls are refrigerating, melt the chocolate and coconut oil together over low heat.
7. Coat each cookie dough ball in chocolate and place onto a parchment-lined plate or a cooling rack.
8. Place truffles in the refrigerator to set.
Recipe Notes:
- Add 2-3 more tbsp of oat flour if the consistency of the dough is too runny.
- Store leftovers in the refrigerator.
- To make the recipe dairy-free, you can sub coconut oil for butter. It won’t have the same ‘cookie dough’ flavor but another great tasty option.
