Zucchini Bread
Ingredients
3 eggs
1/3 cup melted coconut oil
2 tsp vanilla extract
1/2 cup coconut sugar
1/4 cup maple syrup
Zest of 1 lemon
2 cups loosely packed grated zucchini (about 1 medium zucchini)
2 cups oat flour
1/2 cup tapioca flour
1 1/2 tsp cinnamon
1/2 tsp baking soda
3/4 tsp baking powder
1 tsp fine sea salt
Instructions
1. Preheat the oven to 350°F (175°C) and grease (or line with parchment paper) a bread pan.
2. In a large mixing bowl, whisk together the eggs, vanilla extract, maple syrup and coconut sugar. Add the lemon zest.
3. Grate the zucchini using a box grater or food processor. Add grated zucchini to the wet ingredients.
4. In a separate bowl, combine the oat flour, tapioca flour, cinnamon, sea salt, baking powder, and baking soda.
5. Mix the dry ingredients into the wet ingredients and stir until well combined.
6. Pour the batter into the prepared pan and spread it evenly
7. Bake for approximately 1 hour or until a toothpick inserted into the center comes out clean.
8. Allow the bread to cool in the pan for a few minutes, then transfer it to a wire rack to cool completely.
9. Once cooled, slice, serve, and enjoy!
