Banana Blueberry Muffins
Ingredients
3 overripe banans
4 eggs
2/4 cup coconut butter (or butter, ghee, etc).
3 Tbsp pure maple syrup
2 tsp vanilla extract
1/2 cup coconut flour
1/4 cup tapioca flour
1 tsp baking powder
1/2 tsp baking soda
1/4 tsp seal salt
1 cup blueberries
Instructions
1. Preheat oven to 350°F.
2. Combine all dry ingredients in a bowl: coconut flour, tapioca flour, baking powder, baking soda, and sea salt.
3. In a separate bowl, mash up the bananas. Add in the eggs, maple syrup, vanilla extract, and coconut butter (melted). Mix until very smooth.
4. Stir the dry ingredients into the wet ingredients until combined. Add in the blueberries.
5. Line a muffin tin with liners or coat muffin pan.
6. Bake in the oven at 350°F for about 35 minutes or until you test the center with a toothpick and it comes out clean.
