Tahini Spinach Pasta
This makes a great simple and comforting meal that is both dairy free and gluten free!
Ingredients
1 box pasta of choice (I used gluten free organic fusilli)
2 cups spinach
3 tbsp tahini
1 tsp garlic powder
1/2 lemon (the juice)
1/2-3/4 cup pasta water
3 tbsp nutritional yeast
1 onion
sea salt to taste
red pepper chili flakes (optional)
Instructions
1. Bring water to a boil, add some sea salt and cook the pasta.
2. While the pasta is cooking, caramelize 1 onion in a separate pan.
3. Once the pasta is cooked, set aside 1 cup of pasta water and then strain the pasta.
4. Return pasta to the pot and mix in the tahini, garlic powder, lemon juice, nutritional yeast and 1/2 cup of the pasta water.
5. Add in the spinach. Turn the heat back on low and mix well. Add the remaining pasta water if needed.
6. Drizzle with olive oil, sea salt, and chili flakes (if using).
