Avocado Egg Salad

This quick and healthy lunch idea is perfect for busy days and can be prepared in advance for an easy grab-and-go meal. Serve it over a bed of lettuce, on a sandwich, or as a dip with veggies. It's versatile and delicious!

Ingredients

8 hard-boiled eggs

2 avocados

1 tbsp dijon mustard

1 tbsp chopped dill

1 tbsp lemon juice

Salt & pepper

Instructions

1. In a medium-sized bowl, mash together the hard-boiled eggs and avocados. Stir in the dijon mustard, chopped dill, lemon juice, and pepper.

2. Mix until well combined, then season with salt to taste.
