Chocolate Zucchini Muffins
Your little ones won't believe there is zucchini in these muffins! They are tasty and super simple to make.
Ingredients
3 eggs
1 cup grated zucchini
1/4 cup coconut oil (or can use butter or ghee)
1/3 cup maple syrup (or 1/2 cup for slightly sweeter muffins)
1 tsp vanilla extract
2 cups oat flour
1/3 cup cacao powder
1/2 tsp baking soda
1/4 tsp sea salt
Instructions
1. Preheat the oven to 350°F. Line a muffin tin with paper liners or grease them well.
2. In a large bowl, whisk together the oat flour, cacao powder, baking soda, and sea salt until well combined.
3. Using a grater (I think a box grater works best for this but you can also use a hand grater) grate the zucchini. Place the grated zucchini in a paper towel and squeeze out the extra moisture.
4. In another bowl, mix the melted coconut oil, maple syrup, eggs, and vanilla extract until well combined. Fold in the zucchini.
5. Add the wet ingredients to the dry ingredients and stir until just combined.
6. Scoop in muffin tin until 3/4 full
7. Bake for about 20-25 minutes or until a toothpick inserted into the center of a muffin comes out clean.
