Marshmallows

Homemade marshmallows that are light, fluffy, and naturally sweetened with maple syrup? Yes, please! 

Ingredients

1 cup water

1/4 cup grass-fed gelatin

1 1/2 tsp vanilla extract

1 cup pure maple syrup

1/2 tsp sea salt

Instructions

1. In a mixing bowl, combine 1/4 cup gelatin with 1 cup water. Stir until fully combined and set aside.

2. In a medium saucepan, heat 1 cup maple syrup over medium heat until it reaches 240°F. Use a meat or candy thermometer for accuracy.

3. Pour the gelatin mixture into the bowl of a stand mixer (or use a hand mixer if you don’t have one). Slowly add the hot maple syrup to the bowl.

4. Mix on low speed for 2 minutes to dissolve the gelatin.

5. Turn the speed to high and mix for 5–8 minutes, keeping an eye on it to avoid overmixing. The mixture might look slightly runny, but don’t worry—it will firm up as it sets in the fridge.

6. Pour the mixture into a greased 8x8-inch pan, spreading it evenly.

7. Refrigerate for about 2 hours, or until set.

8. Remove from the fridge, cut into squares, and enjoy!
